Tanghulu (Microwave Method)

Tanghulu (Microwave Method)

Candied fruit with a glass-like crunchy sugar shell.

Tanghulu (Microwave Method)

15 min · 4 servings

Ingredients

  • Strawberries or Grapes (washed and completely dried)
  • 1 cup White Sugar
  • ½ cup Water
  • Bamboo skewers

Method

  1. Skewer the fruit. Critical: Fruit must be 100% dry or sugar won't stick.
  2. In a microwave-safe mug, mix sugar and water. Do NOT stir after mixing.
  3. Microwave in 30-second intervals. Usually takes 5–8 minutes total.
  4. Test: Dip a chopstick in sugar then in ice water. If it crunches, it's ready.
  5. Working fast, dip fruit into hot sugar syrup and immediately plunge into ice water to set shell.

Chef's tip: Work extremely fast — the sugar sets within seconds of touching the fruit
