The party plan
Make the dips and salads hours ahead and keep them chilled. Boil the potatoes in advance, and leave the roasting and frying for the last half hour so everything arrives crisp.
Questions
What's the easiest party appetizer?
Whipped feta with hot honey: five minutes in a blender, served with toasted bread.
How do I get really crispy potatoes?
Boil them first, dry them well, then smash and roast them in oil in a very hot oven. Steam is the enemy of crunch.
