Homemade Bread Recipes — Sourdough, Focaccia, Naan, Bagels & Brioche
Nothing smells like bread coming out of your own oven, and homemade bread is easier than it looks: flour, water, yeast, salt and time. The whole difference is exact measurements and knowing when the dough is ready.
They're ordered from easiest to most demanding: from banana bread, which needs no yeast at all, to sourdough, which needs patience.
The recipes
- No yeast, no kneading — the easiest loaf here and the most searched. · 75 min

- Italian focaccia with olive oil and big airy bubbles. · 2 h
- Real bagels are boiled before baking — that's the shiny chewy crust. · 3 h
- Brioche rich with butter and eggs, soft as cotton. · 24 h
- Naturally leavened sourdough — a project, and worth it. · 24 h
Chef's notes
How to tell the dough has risen enough
Press the dough with a finger: if it springs back slowly and leaves a slight dent, it's ready. Springs back at once, it needs more time; doesn't spring back at all, it's over-proofed.
Weigh, don't scoop
In bread, a packed cup of flour and a light one can differ by 30 grams. That's why the recipes give grams wherever they can.
Questions
What's the easiest bread to make at home?
Banana bread, cornbread and naan need no yeast. Of the yeasted breads, focaccia is the easiest for beginners.
Do I need a stand mixer?
No. Every recipe works kneaded by hand; a mixer only saves time.
How do I store homemade bread?
Two days in a cloth or paper bag at room temperature, or slice and freeze for up to 3 months and toast straight from frozen.
