Mochi Brownies (Brochis)
A chewy, stretchy hybrid of Japanese mochi and American brownies.
2 h · 9 servings
Ingredients
- 1 cup Glutinous Rice Flour (Mochiko) — must be glutinous
- ¼ cup Cocoa powder
- 1 cup Sugar
- 1 tsp Baking powder
- 1 cup Milk
- 1 Egg
- 2 tbsp Butter (melted)
- Chocolate chips
Method
- Preheat oven to 350°F (175°C). Grease a square baking pan.
- Whisk all dry ingredients in a bowl.
- Whisk all wet ingredients in another bowl.
- Combine wet and dry ingredients. The batter will be liquidy.
- Pour into pan. Sprinkle chocolate chips on top.
- Bake 60–70 minutes.
- Let cool completely before cutting. The texture is bouncy and chewy.
Chef's tip: Don't substitute regular rice flour — only Mochiko (glutinous rice flour) gives the chewy texture
