Salad Recipes — Fattoush, Caesar, Potato & Pasta Salad
A salad isn't just a side — it's often the first bowl to empty. The difference between an ordinary salad and one people ask for again is the dressing: the right acidity, the right salt and when it goes on.
Here are the most requested Arab and international salads, from sumac fattoush to creamy Caesar, each with exact ingredients.

Chef's notes
When to dress a salad
Leaf and bread salads (fattoush, Caesar) are dressed just before serving so the lettuce stays crisp and the bread stays crunchy. Potato and pasta salads are the opposite: they taste better after an hour in the fridge.
Dry your greens
Wet lettuce waters the dressing down and it pools at the bottom of the bowl. Dry leaves well after washing.

Potato salad and pasta salad — both improve after resting in the fridge.

Yes — the book's classic Caesar dressing uses anchovies, which are halal.
